Postcode system is not adopted in Hong Kong. You can fill in with 000000 or HKG which are frequently used.

Octopus Ticket Office hours
I'm arriving at the Airport at 2300. By the time I get my bag and through Immigration it maybe be 2330 or 2400. Will the ticket office be open to buy the Octopus Card and from were. Thank you.

If i keep the Octopus card for my next trip, say in 2 years time. Will i still have my credit on it and the deposit?

The office opens from 06:00 - 23:00 but there is the self-service machine on which you can buy one. The card becomes invalid if you haven't added value for 1,000 days, so I think your two-year old one is still valid with deposit.
